Sweet, Pasta Salad!
Last Monday, I had leftover rainbow pasta from the day before and thought I would try something completely off the cuff. The result: fantastic! - according to me. Here's the gist.
Sweet Pasta Salad
1/2 bag rainbow pasta
1 C. grapes, halved
2 stalks of brocoli, cut into flowerettes
1 1/2 C. jicama, cubed
3 Tbsp. flax seed (why not?)
1 sm. carton vanilla yogurt (you know, the size you have for breakfast)
1/3 C. mayonnaise
2-3 tsp. apple cider vinegar
1-2 Tbsp. sugar (who am I kidding?...I'm sure I used at least 2!)
a few drizzles of olive oil
Cook the pasta, drain it and run under cold water. Mix everything together and serve. Can be eaten chilled or at room temperature, it's just up to your personal preference.
Oh, and if anyone can come up with a better name for this salad, please let me know! I spent all my brain power just writing the recipe down. I am coming up blank for a good title and as we all know, it's all in the name.
