Southwestern Egg Rolls

These are AWESOME (I think we made them 4 times in 1 week), but they do take some time to prepare.

1 can shredded chicken
2 T green onion, finely chopped
4 T red pepper, finely chopped
4 T spinich (frozen) chopped
4 T jalapeno, finely chopped
1 c frozen corn
3/4 c black beans (1/2 a can roughly)
1 T fresh parsley, minced
1 T cumin, ground
1 t chili powder
1/3 t salt
1 pinch cayenne pepper
1 1/2 c shredded jack cheese

Heat all ingredients in frying pan, just till cheese is melted

Wrap in tortillas, hold with tooth picks

Fry

I think it makes about 10, using large tortilla shells

(the recipe says to freeze them before you fry, but I have never done that)


CILANTRO-LIME DRESSING
1 1oz pkg ranch dressing mix
1 1/2 c sour cream
1 T lime juice
1 T chopped cilantro (the more you add the spicier it will be)

Mix and chill 30 min.

This recipe looks really yummy and very healthy. Is the Lime Dressing pretty thick?

It is pretty thick. I just add a little milk.
