Chicken Italiano



We're trying new things at our house again. Simple, diabetes-friendly recipes and I'm finding more and more that food can be healthy AND taste good. I cooked this up last night in VERY little time and we loved it.

Ingredients:

1 Tbsp olive oil
3 garlic cloves (minced)
2-3 tsp oregano
1 Tbsp fresh parsley (minced)
salt and pepper to taste
3 small tomatoes (diced)
1 14oz. can of diced tomatoes (Sweet Onion style - or Italian style if you can't find the other)
2 lbs. of chicken (tenders or breasts - cut into smaller pieces)
parmesan cheese (grated and fresh if you have it)

Drizzle oil in a frying pan and heat oil on high, add chicken (don't add garlic or it will burn). Salt and Pepper chicken and turn when browned. While cooking the other side of chicken add all of your prepared ingredients. Turn heat down to medium and heat ingredients through. Simmer for about 2 minutes (chicken should not be cooked completely). Transfer everything to a crock pot and cook for 2-3 hours. Serve over pasta, rice or we used zucchini noodles . Sprinkle parmesan cheese over the top and enjoy!
