Chicken Parmesan

Hi!  First time poster here!  :)  I made a delicious dish tonight that I wanted to share.  It tastes amazing, though I don't think the picture does it justice.  Richard was raving about it, which of course made me want to share it.  Yum!

Chicken Parmesan  (w/angel hair pasta)

3 medium chicken breasts
2/3 cup bread crumbs
1 1/2 cups shredded mozzarella cheese
2/3 cup parmesan cheese
1/4 cup flour
1 egg
2 Tbsp butter or margarine
3 Tbsp olive oil or vegetable oil
1/2 package Angel Hair Noodles
Prego mushroom spaghetti sauce


1. Beat egg in shallow bowl; spread flour and bread crumbs on seperate plates.  Dip chicken breasts to coat both sides evenly, first in flour, then in egg, then in bread crumbs.  Press crumb coating firmly into chicken.

2. Heat butter and 2 Tbsp oil in large skillet over medium-high heat.  Add chicken.  Cook both sides until browned.

3. Preheat oven to 350 degrees F.  Remove chicken with slotted spatula to ungreased 13x9-inch baking dish.  Sprinkle mozzarella cheese evenly over chicken.  Spoon spaghetti sauce evenly over cheese.  Sprinkle Parmesan cheese over spaghetti sauce.

4. Drizzle remaining 1 Tbsp oil over top.   Bake, uncovered, 25 minutes or until chicken is tender and cheese is golden.  Garnish if desired.  Serve with pasta.
