I want to make another small change to the recipe book, I know not everyone has access to one, but bare with me. I made the Lime Chicken Marinade the other night and it needed to be tweeked. Add a little less soy sauce, more lime juice and a few tablespoons of sugar. It's all to taste, but it definately needs some sugar to cut down on the acid and soy sauce. Without it, it makes the dish taste more like an oriental dish.

By the way, this recipe (tweeked) was a big hit! I served it as the meat in the Ultimate Salad.
