Zucchini Bisque
Originally, this was a basic cream of veggie soup, but with a few alterations it has become one of my family's top favorite soups (even the kids loved it). It might even make a zucchini lover out of you!
1/2 med. onion, chopped
2 cloves minced garlic
4 Tbsp. butter
5 Tbsp. flour
5 C. milk
2 tsp. chicken bouillon
1/2 tsp. salt
1/4 tsp. pepper
4 C. grated zucchini
1 1/2-2 C. grated cheddar cheese
Saute onion and garlic in butter. When cooked, add flour and stir until combined. Add bouillon, salt and pepper to milk, whisk together and add to flour mixture. Bring to a boil and thicken. Add zucchini. In batches, remove soup and blend thoroughly in blender. Return to pan and simmer for 10 minutes. Remove from heat, add grated cheese, let it melt and then serve. Makes 6-8 servings
