Jon's Mom is in town and we went to this great restaurant in Coconut Grove. She ordered this amazing Mahi-Mahi dish that came with garlic "smashed" potatoes and the BEST sauce. I haven't made it yet but it was too good to not share. I got this recipe from the restaurant's website - so I suspect it's pretty legit. If I find a recipe to copy the nutty breading on the fish I'll share that too. The potatoes were yukon gold, we think, with roasted garlic. Mmm Mmm Mmm.
Small Vanilla Rum Butter Sauce
Ingredients
¼oz one piece only Whole peeled shallots sliced thin
¼ea whole vanilla bean split and seeded
1½tsp vanilla extract-pure
1fl oz white wine
2fl oz Rum CHEAP
2fl oz granulated sugar
1cup heavy cream
4oz unsalted butter room temp
Place the rum, shallots, vanilla beans, and white wine, sugar and vanilla extract into the sauce pan and stir
Place the pan on the stove with high heat and bring to a boil
Reduce until the mixture starts to thicken
Add the heavy cream and reduce by 1/2
Turn off the heat and whisk in the softened butter
Strain through a Chinoise( a fine strainer) into a small container.
The recipe yields 1pint.

So, was this sauce for the fish? or the mash potatoes? I am thinking fish, but you never know...
Both. They put the potatoes in the center of the plate, artistically placed four asparagus spears on top then the sauce and the fillet was on top of it all.
Yum! Can't wait to try it!
Are you sure this wasn't at Dan Marino's restaurant in Sunset Place? It's just a few miles from the Grove and recently closed down. That's why I'm looking for the recipe because I LOVE that sauce. Thanks!
Were you able to find a copycat recipe of the nut crusted fish and mashed potatoes too? My favorite dish at Dan Marino's too bad ours closed down too. Thanks in advance!
