Calling a request!
Anyone have good recipes for Squash!!!??! We have them coming out our ears (I don't even like them) and Andrew will barely eat them, I have given away as many as I can at work and now...I just need to cook them.
Anything I have done with zucchini, I have done with squash. Last week I grated yellow squash and zucchini together and froze 32 cups worth. Use it in soups (you might actually get Andrew to eat the zucchini bisque, you can't really detect vegetables in it), I also used yellow squash with my fried zucchini batch and Dad actually like the yellow squash better.
When the squash and zucchini are small and don't have large seeds, I use them fried, broiled with cheeses on top, or in stir fry. If they got carried away in the garden and are more mammoth in size, I grate them and use them in soups, cake, cookies, and zucchini bread, thus the reason for freezing bags of grated for later this winter.
You could cook them, blend them, and then freeze them for future children. I gave my kids lots of squash as babies and they loved it, so it would save you lots of money in baby food later on.
