Maybe in a perfect world I would have made my own fresh bagels to create these sandwiches but, let's face it, here on planet earth I picked these for their convenience. Which they were. I thought with the Mediteranian theme of these sandwiches I would exercise my whimpy "fresh herb skills" and add some fresh basil from my garden. I only put it on one side to see if there was much of a difference. In my opinion there was a big difference but, I don't think I would have bought some at the store for the two sandwiches that got eaten. Since I have some in my garden I won't ever leave it out.
If you are working around a big hole in your bagel you can put your feta under the cheddar so it doesn't fall off the top. Don't worry it will still show up when it all melts in the oven. In fact all the toppings show through the cheese. I happily ate both sides of the bagel this time. Yummy! Thanks Beckstar!
