Curry Couscous
2 C. chicken brother or water
2 tsp. curry powder or 1 rounded tsp. mild curry paste
1/2 tsp. salt
1 Tbsp. olive oil
A handful of raisins
1 C. couscous
2 scallions (green onions), sliced on angle
1 carrot, shredded or grated
1 navel orange, peeled and chopped
2 oz. sliced almonds
Bring broth to boil with curry powder, salt, olive oil and raisins. Place couscous in a bowl. Add boiling liquid, cover, and let couscous stand 10 minutes, then fluff with a fork and combine with scallions, carrots, orange bits and almonds. NOTE: If you like a little more moisture, use a can of mandarin oranges with liquid. I have also put in small chunks of apple.

So is this the cous cous recipe you wanted me to try or were you referring the the sweet recipe?
This is the one. I think it ended up being a little sweeter than originally because I added mandarin orange juice to make it less dry.
